ANDREA’S NOTE: Much of our Summer menu inspiration was pulled from the summers we spend in Italy with our family and what you can find on our tables in Calabria. The Friselle Bruschetta is a summer time essential. Friselle is known as a traveler’s bread and originated in Puglia. It’s a twice baked bread meant to last and was taken among emigrants traveling by sea. The scent that fills the streets of many towns in Calabria is that of fried potatoes and peppers. We’ve added an authentic spicy Calabrian sausage and Tropea onion jam, made with red onions found in the town of Tropea, Calabria and known as La Regina Rossa, The Red Queen. They’re known to be the sweetest and most delicious red onions in the world. The Genovese Tagliatelle is more noted from the Liguria region of Italy, but makes me think of our Zia Gina who meets us in Calabria in summer and makes this dish for us every year. I’ll be finishing every meal with a lemon sorbetto as nothing tastes more like an Italian summer to me than that. Oh and don’t forget a nice cool glass of whites from our Summer Whites Trio Collection! Salute!
